Avocado and crab on a coconut milk blinis

Blinis dough : 

  • 80g flour
  • 1/2 tablespoon baking powder  
  • 1 egg
  • 10cl coconut milk
  • 5cl milk

In a bowl mix the flour, baking powder and a hint of salt. Heat the milk( coconut milk mixed with milk in a pan. In a bowl beat the egg yolk with the milk and combine with the flour mixture.Mix to make a soft dough. Whip up egg white and combine it with the dough. In a creased pan cook your blinis.

Once the blinis are cooked spread the avocado and crab salad ( recipe under)

Avocado and crab salad

  • 1 Avocado
  • frozen or fresh crab
  • mayonnaise 
  • lime juice
Cut the avocado in small pieces and mix it with crab meat. In another bowl mix the mayonnaise with the lime juice. Spread the sauce on the crab/avocado salad and mix everything.
